The peculiarity of San Salvatore pasta lies precisely in the choice of Senatore Cappelli durum wheat, a cultivar typical of central-southern Italy, first produced in the early 20th century. Obtained from a careful selection of particularly resistant grains, its production began on the lands of Marquis Raffaele Cappelli – hence the cultivar’s name. The flour obtained from this wheat is particularly aromatic. The grain’s consistency ensures better cooking resistance, offering a richer and more satisfying culinary experience to the palate.
To best enjoy San Salvatore pasta, ensuring it retains the chosen sauce perfectly, prepare abundant salted water and add the pasta when the water is vigorously boiling. Cook according to the cooking times indicated on the package and, if necessary to sauce separately, drain the pasta a few seconds early.
